Banana Double Chip Scone

Ingredients

2 cups all-purpose flour
1/2 cup packed light brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter, chilled
3/4 cup mashed ripe banana
1 large egg
2 tablespoons buttermilk
1 teaspoon vanilla extract
3/4 cup peanut butter chips
3/4 cup semi-sweet chocolate chips

Methods:

1: Preheat oven to 400 degrees F.
2: Lightly grease a 10-inch-diameter circle in the middle of the cookie sheet; set aside.
3: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
4: With a pastry blender or two knives, cut the butter into 1/4-inch size pieces and stir into flour mixture.
5: In a small bowl, stir together the banana, egg, buttermilk, and vanilla extract.
6: Pour banana mixture into flour mixture and stir to combine.
7: Stir in both chips. Dough will be sticky.
8: Spread the dough into a 9-inch-diameter circle in the center of the prepared cookie sheet. With a serrated knife, cut into 8 wedges.
9: Bake for 19-21 minutes, or until lightly browned and toothpick inserted in center of scone comes out clean. Transfer to cooling surface. Re-cut wedges if necessary.
