Banana-Macadamia Nut Scones Recipe

3 Cups All Purpose Flour
1/4 Cup Yogurt
1/2 Cup Brown Sugar, Packed
1 Teaspoon Vanilla Extract
2 Teaspoons Baking Powder
2 Large Eggs
1/2 Teaspoon Salt
1 Cup Mashed Bananas
1/4 Teaspoon Baking Soda
1 Tablespoon Brown Sugar
3 Tablespoons Chilled Butter
1/3 Cup Chopped Mac Nuts
Methods:
Preheat oven to 400 degrees F.Lightly spoon flour into dry measuring cup, and level with a knife. Combine the flour, brown sugar, baking powder, salt and soda in a bowl.Cut in the butter with a pastry blender until the mixture resembles coarse meal; set aside.In another bowl combine yogurt, vanilla, eggs and banana until well blended. Add this to the flour mixture, stirring just until moist (dough will be wet and sticky- DO NOT OVER BLEND).Turn dough onto a lightly floured surface and knead lightly with floured hands four times shaping dough into a 9″ circle.Place dough on baking sheet coated with cooking spray.Sprinkle the mac nuts and 1 tablespoon brown sugar over the dough, pressing gently.Cut dough into 12 wedges, cutting into but not through dough.Bake for 20 minutes or until golden brown.These are best served warm!
