Raisin Bran Scone

Ingredients

1 1/2 cups raisin bran cereal
1/2 cup milk
2 cups all-purpose flour
1/2 cup packed dark brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, chilled
2 large eggs
1 1/2 teaspoon vanilla extract
2/3 cup chopped walnuts

Egg Wash:
1 egg
1 teaspoon water

Methods:

1: Preheat oven to 375 degrees F.
2: Lightly grease a 10-inch diameter circle in the center of the cookie sheet; set aside.
3: In a small bowl, stir together the cereal and 1/2 cup milk. Let mixture stand 5-10 minutes to soften.
4: In a large bowl, whisk together flour, brown sugar, baking powder, and salt.
5: With a pastry blender or knife, cut chilled butter into small 1/2-inch size cubes and stir into flour mixture.
Step 6: Stir in eggs and vanilla extract to cereal mixture.
7: Pour cereal mixture into flour mixture and stir to combine. Dough will be sticky
8: Stir in chopped walnuts.
9: With lightly floured hands, pat dough into an 9-inch circle in the center of the prepared cookie sheet.
10: In a small bowl, stir together egg and 1 teaspoon of water. Brush top of scones with egg wash mixture.
11: With a serrated knife cut into 8 wedges.
12: Bake 30-34 minutes or until toothpick comes out nearly clean when inserted in scone. Better to under bake slightly, than over bake.
13: Let scones set for 1 minute and then carefully re-cut wedges with knife and transfer to a cooling surface.
